Cheesy Chicken, Broccoli + Rice Casserole

A well balanced meal that's deliciously comforting!
-I cook my rice in an instant pot while I am prepping and cooking the broccoli
-I use fresh chicken breasts, dice them up, ad them to a pan with oil, and season well with salt, pepper, onion + garlic salt


  • 1 cup cooked rice
  • 3 chicken breasts cooked + diced
  • 1 large head broccoli steamed + diced
  • 1 small onion diced
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 3/4 cup milk
  • 1 block cheddar cheese freshly grated
  • 3 tbsp butter melted


  • Combine in a large mixing bowl the following: cooked rice, cooked diced chicken, steamed and diced broccoli, diced onion, cream of chicken soup, sour cream, melted butter, milk, and 3/4 of the grated cheese
  • Mix well! Pour mixture into a greased 9x13 dish and sprinkle the remaining cheese on top
  • Bake at 350 for 20-25 minutes. Broil for a minute or two to get cheese a little brown, if desired
