
Cheesy Chicken, Broccoli + Rice Casserole
You can’t beat a good casserole recipe! Casseroles have always been one of my most favorite things too make!
I love that you can just put everything in one dish, plop it in the oven, clean up the kitchen while it bakes, and by the time you’re usually done cleaning up your mess – voila! Dinner is done! 🙂
Alongside soup, casseroles also make a for a warm and comforting fall dinner. This Cheesy Chicken, Broccoli + Rice Casserole includes your protein, veggie, and carb all in one.

Cheesy Chicken, Broccoli + Rice Casserole
A well balanced meal that's deliciously comforting!Tips:-I cook my rice in an instant pot while I am prepping and cooking the broccoli-I use fresh chicken breasts, dice them up, ad them to a pan with oil, and season well with salt, pepper, onion + garlic salt
Ingredients
- 1 cup cooked rice
- 3 chicken breasts cooked + diced
- 1 large head broccoli steamed + diced
- 1 small onion diced
- 1 can cream of chicken soup
- 1 cup sour cream
- 3/4 cup milk
- 1 block cheddar cheese freshly grated
- 3 tbsp butter melted
Instructions
- Combine in a large mixing bowl the following: cooked rice, cooked diced chicken, steamed and diced broccoli, diced onion, cream of chicken soup, sour cream, melted butter, milk, and 3/4 of the grated cheese
- Mix well! Pour mixture into a greased 9×13 dish and sprinkle the remaining cheese on top
- Bake at 350 for 20-25 minutes. Broil for a minute or two to get cheese a little brown, if desired
