Jiffy Sausage Muffins
These Jiffy Sausage Muffins are one of my most favorite recipes! They are quick, delicious, and affordable!
I love that they are savory with a little bit of sweet. They’re honestly kind of addicting. I have been making them for the last couple years on Christmas morning and this year will be no different!

I normally use the pork sausage from Aldi and snag a box of the jiffy mix when I’m there, too! Aldi’s pork sausage is usually $1.79 where we live, and the box of jiffy is only 89 cents, so it’s a VERY affordable recipe! I used to be so hooked on only using Bob Evans sausage, but I’m telling you this Aldi sausage miiiiiiiiiight even be better than Bob’s.
Anyways, these are perfect for Christmas morning and go well paired with some cinnamon rolls on the side! 😉 I love that you can just brown the meat, mix ’em together, toss them in the oven + you’re good to go while you open presents!

Jiffy Sausage Muffins
Ingredients
- 1/2 lb pork sausage
- 1 8.5 oz jiffy corn muffin mix
- 1/2 cup shredded cheddar cheese
- 1 egg
- 1/3 cup milk
Instructions
- Preheat oven to 400 degrees
- Brown the sausage
- Prepare corn muffin mix according to the instructions on the back
- Add in the cheese + sausage and then mix everything well
- Grease 8 muffin cups and distribute batter evenly into the 8 cups
- Bake for about 15 minutes or until cooked through (edges will be golden brown)
